This sourdough creation combines dark rye, wholegrain rye, and wheat flours with a long, slow fermentation of two pre-ferments — Sauerteig and Poolish.

The result is a deeply aromatic loaf with a dark, robust crust and a moist, earthy crumb that celebrates the essence of traditional craftsmanship.

 

Its rich, malty notes and the subtle warmth of bread spice make it the perfect companion for cheese, smoked meats, or a classic Bavarian “Brotzeit.”
